Super Easy Protein Pancakes

Wet Ingredients

  • 2 large eggs
  • 1/2 cup egg whites
  • 1 cup milk (you can use any kind you like)
  • 2 tbsp Swerve Sugar-Free Sweetener
  • 1/2 lemon (juiced and zested)

2 tbsp butter for cooking

    Homemade Jam

    Instructions

    For the Homemade Jam

    • Heat up a medium sized (8"-10") sauce pan, combine berries and Swerve. Using wooden spoon, stir ingredients together until your sweetener is completely dissolved. Cook for 10-12 minutes or until the water from the berries evaporates and your Jam thickens. 
      P.S. you can add more sweetener if you want your Jam to taste sweeter. 

    For The Pancakes

    • In a bowl mix all your dry ingredients. Then add your eggs, egg whites, milk, lemon juice, zest and Swerve. Whisk until you get a very smooth and soft batter. 
    • Heat up a non stick pan to medium-high heat. Brush your pan with some butter (you can also use cooking spray). Using a ladle, scoop up some of your batter onto the hot pan and cook for just about 2 minutes. Flip your pancakes and let them cook for another 45 seconds to 1 minutes or until golden.  
    • Stack up your pancakes and top with some of your freshly made jam.
