Super Easy Protein Pancakes
Servings 8 Pancakes
- 2 large eggs
- 1/2 cup egg whites
- 1 cup milk (you can use any kind you like)
- 2 tbsp Swerve Sugar-Free Sweetener
- 1/2 lemon (juiced and zested)
2 tbsp butter for cooking
For the Homemade Jam
Heat up a medium sized (8"-10") sauce pan, combine berries and Swerve. Using wooden spoon, stir ingredients together until your sweetener is completely dissolved. Cook for 10-12 minutes or until the water from the berries evaporates and your Jam thickens. P.S. you can add more sweetener if you want your Jam to taste sweeter.
For The Pancakes
In a bowl mix all your dry ingredients. Then add your eggs, egg whites, milk, lemon juice, zest and Swerve. Whisk until you get a very smooth and soft batter.
Heat up a non stick pan to medium-high heat. Brush your pan with some butter (you can also use cooking spray). Using a ladle, scoop up some of your batter onto the hot pan and cook for just about 2 minutes. Flip your pancakes and let them cook for another 45 seconds to 1 minutes or until golden.
Stack up your pancakes and top with some of your freshly made jam.
