Chocolate Marbled Loaf Cake (Refined Sugar free)

  • 3/4 of a cup of melted organic butter.
  • 4 large free range organic eggs.
  • 1/2 Cup of coconut sugar or brown sugar.
  • a pinch of salt.
  • 1 and 1/3 cup of unbleached all-purpose flour.
  • 1 tsp of pure vanilla extract.
  • 1/4 cup of raw cocoa powder.
  • 1/2 cup extra dark chocolate chips Optional


  • Preheat your oven to 375 F.
  • Separate your egg yolks from whites.
  • Add sugar and salt to your egg yolks and mix thoroughly.
  • Start by adding small quantities of flour and butter and mix. This process will avoid you ending up with any lumps in your batter. You should end up with a very thick batter.
  • Now beat your egg whites until you form a meringue consistency. This is like a shaving cream consistency. Check picture above. If you are doing this process by hand, use a large bowl and do long strokes. FYI : Great arms workout.
  • Now add your meringue to the batter and whisk with a spatula. Once you have a homogenous batter you will notice that it is now much lighter.
  • Split your batter between two bowls. Leave one bowl aside and to the other bowl add the cocoa powder and mix. Now add in your chocolate chips and fold them into the mixture.

Your chocolate mix should be very thick, just like a brownie batter.

  • Oil a non-stick loaf mould. If you don't have a non-stick one, dust your mould with flour to make sure your cake doesn't stick.
  • Now using a spatula put half of your vanilla mixture first and then half of the chocolate mixture.
  • Add the remaining vanilla and drop the rest of the chocolate mixture on top. Check the picture above for reference.
  • Bake for 40 to 50 minutes depending on your oven.

If you wanna make sure that it's done, just stick a toothpick in the middle, if it comes out clean then you know it's done.
