This is recipe is long overdue. Pancake day has been on standby for far too long and now it is back, friends. These are not your run-of-the-mill pancakes: these are loaded with protein, free of refined sugars and fluffy as hell.
That last part is just as important, if not more important. You know it. We know it.

What are Protein Pancakes ?
Protein Pancakes are just your regular pancakes, with a healthy dose of added protein. In our case, we boosted the protein content with egg whites, milk and protein powder. And … instead of drowning the pancakes in maple syrup, or worse, syrup, we will make a much healthier mixed berries jam.
You only need 2 Ingredients to rock that Jam:
- Your Favorite Sweetener. We are big fans of Swerve’s Granulated Sugar Substitute (link in recipe if you need)
- Frozen Berries
I’m not going to lie, these were pretty epic. I usually dislike protein pancakes, as they usually have a pretty awful aftertaste. But not these. These Protein Pancakes are Choice. I am saying that for a multitude of reasons. Taste being one of them of course.
- You can prep these ahead of time. They will sit nice and tight in your fridge for at least 3 days.
- Protein Pancakes are a welcome change.
- Everyone loves pancakes, so you don’t have to worry about pleasing your breakfast crowd.
- They are a whole lot healthier than your average pancake.
In case you were wondering, that was 4 reasons to make protein pancakes for ya… Not to mention that there is an infinite amount of ways you can change and upgrade this recipe to make it your own. For instance, you can go half flour, half oats. You can also go down the buckwheat road. Don’t like berries? How about you use caramelized bananas. You can even throw a super ripe couple bananas in there and skip the sweetener altogether.
See? The possibilities be Infinite.
As it is the case with most of our recipes, my aim is to provide you with to provide you with a blueprint recipe that will serve you well over the years. This Protein Pancakes Recipe is just that.

Super Easy Protein Pancakes
Ingredients
Dry Ingredients
- 1 1/4 cup all purpose flour
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1 scoop protein powder
Wet Ingredients
- 2 large eggs
- 1/2 cup egg whites
- 1 cup milk (you can use any kind you like)
- 2 tbsp Swerve Sugar-Free Sweetener
- 1/2 lemon (juiced and zested)
2 tbsp butter for cooking
Homemade Jam
- 200 g frozen berries of your choice
- 2 tbsp Swerve Sugar-Free Sweetener
Instructions
For the Homemade Jam
- Heat up a medium sized (8"-10") sauce pan, combine berries and Swerve. Using wooden spoon, stir ingredients together until your sweetener is completely dissolved. Cook for 10-12 minutes or until the water from the berries evaporates and your Jam thickens. P.S. you can add more sweetener if you want your Jam to taste sweeter.
For The Pancakes
- In a bowl mix all your dry ingredients. Then add your eggs, egg whites, milk, lemon juice, zest and Swerve. Whisk until you get a very smooth and soft batter.
- Heat up a non stick pan to medium-high heat. Brush your pan with some butter (you can also use cooking spray). Using a ladle, scoop up some of your batter onto the hot pan and cook for just about 2 minutes. Flip your pancakes and let them cook for another 45 seconds to 1 minutes or until golden.
- Stack up your pancakes and top with some of your freshly made jam.
