Our keto breading recipe consists of 4 Ingredients:
Pork Rinds + Psyllium Husk + Dried Oregano + Salt
Psyllium Husk is an essential part of this breading recipe as it adds a nice bready consistency to whatever it is you’re frying. If you don’t have it, or don’t care for it, Pork Rinds will work fine on their own.
Not to mention that using pork rinds only will help you drastically lower the total carb count.

Oven-Baked Keto Fried Chicken
I know, fried chicken is supposed to be fried. However, you won’t be needing to fry these babies in order to get that same satisfaction.
Fried foods are generally higher in calories, not to mention that they are generally unhealthy. Keto or not.
To make this recipe the best it can be, choose the right cut of chicken is important. I chose drumsticks as they are easier to work with and have a high fat content. That last part is important.
Why? Since we are not using any oil to cook this, we will be relying on the natural fats of our chicken drumsticks to crisp up and get to that golden brown color we all love.
Therefore, my advice to you is : Use chicken drumsticks with the skin on!
The Chicken Marinade
I don’t know about you, but I like a little kick in my chicken. I actually like a lot of kick in my chicken. This is what I used to make my marinade:
- 3 Tbsp Mayonnaise
- 1 Tbsp Dijon
- 1 Tbsp Hot Sauce
- 1 Tbsp Cajun seasoning
- Juice and zest of 1 lemon
- Dash of Salt
Crucial Tip: If you like your chicken a little more/less spicy I strongly advise you to taste your marinade BEFORE adding in your chicken drumsticks. Add in your hot sauce very slowly and taste until you get to the desired level of heat.
Remember, you can make any kind of marinade you desire (Sweet, Spicy, Savoury …). The only required ingredients are Mayonnaise and Dijon. The rest is all up to your imagination my friend.

Oven Baked Keto Fried Chicken
Ingredients
- 12 chicken drumsticks
- 3 tbsp mayonnaise
- 1 tbsp yellow mustard
- 1 tsp Hot sauce you can use any kind you like
- 1 tsp salt
- 1 tbsp cajun seasoning you can use any kind you like

Instructions
- Preheat your oven 375F. In a large bowl, place your keto breading and set aside. In a separate bowl, add mayo, mustard, hot sauce, seasoning and salt. Mix and add your chicken drumsticks to the dressing.
- Coat your chicken drumsticks with the marinade and roll your drumsticks in your keto breading. Place your breaded drumsticks on a non-stick baking sheet and bake for 35 minutes, or until your drumsticks are golden brown (Internal temperature 165F).
- Serve and Enjoy!
