If you’ve ever wanted to stuff your face with a satisfying beef taco then you’ve come to the right place my hungry friend. I have made this recipe 3 times over the past week, for testing purposes of course, and I’ve always found myself very satisfied with the taste and easiness of this recipe. I present to you my Marinated Beef Tacos recipe.

What Makes this Beef Taco Memorable
Like you, I like my tacos to be perfectly layered. When I’m making a taco, this is what I’m usually looking for:
- Crispy toasted corn tortilla
- A layer of freshness. In this particular recipe, my speedy guacamole recipe does the job perfectly.
- Protein: the marinated beef!
- Crunch: caramelized onions and some fresh cilantro
- The finish: A squeeze of lime
That formula right there makes my favorite beef taco ever. That said, these are the ingredients you will need to make this taco:
- Corn Tortillas: you can use flour tortillas if you prefer. I personally feel that tacos work best with corn tortillas. The taste and texture of corn is unique and perfectly complements all of the other awesome ingredients that make this dish.
- Beef: because we are trying to keep the cost down, I chose to go with beef cubes. Because these are going to be marinated for hours, it really doesn’t matter which cut you choose as it the marinade will help tenderize it. Plus, tacos are all about making cheap cuts shine, and this taco does just that.
- Guacamole: to make this speedy guacamole, all we are going to use is : avocado, lime juice & zest, onion powder, basil, salt and coriander. It’s not your classic guacamole, but it sure is tasty.
- Onions: We are going to cook them until they caramelize and develop their natural sweetness. Because the rest of this tacos is very savory, the sweet onions are a welcome addition.
How to Make Marinated Beef Tacos
If you follow these 4 easy steps, you will get this right ever time.
- Marinate your beef: add to a large bowl your beef cubes, vinegar, lemon juice, paprika, onion powder, cumin and salt. Cover completely with cold water and cover your bowl with plastic wrap. Chill for a minimum of 4 hours, preferably overnight.
- Cook your beef and onions: warm up some olive oil in a skillet on medium-high. Cook your onions forĀ 5-7 minutes or until your onions are slightly charred and translucent. Remove your onions and set aside. Drain your marinated beef and add to the same pan. Cook for 7-10 minutes or until your beef is cooked to your liking.
- Make your guacamole: in a food processor, place your pitted avocados, lime juice & zest, onion powder, basil, salt and coriander. Blend until smooth and set aside.
- Assemble your taco: toast 4-6 tortillas and layer like so: guacamole, cooked beef, caramelized onions, coriander and a squeeze of lime.

Ingredients
- 6 small corn tortillas
Marinated beef
- 1 lbs beef cubes
- 1/4 cup apple cider vinegar
- Juice & zest of 1 lime
- 1/4 cup chopped coriander
- 1 tbsp onion powder
- 1/2 tsp salt
- 1 tbsp olive oil
- 1 small onion
Guacamole
- 2 avocados
- Juice and zest of 1 lime
- 1 tbsp onion powder
- 3-4 leaves fresh basil
- 2 tbsp chopped coriander
- 1/2 tsp salt
Instructions
