Instant Pot Rice and Beans | Made from canned beans

Making Instant Pot Rice and Beans is easy, delicious and completely stress-free. My recipe uses canned beans and delicious blend of ingredient to make this one of your favorite weeknight dinners.

How to make Instant Pot Rice and Beans

This is the ultimate one pot vegan Instant Pot recipe. You can get it done and ready to eat in less than 20 minutes and uses common ingredients that are easy to come by. Here is what you will need

Olive oil, onion and garlic: this is the base upon which you will build up the flavor of your dish. You do not need to finely chop up your onions and you can use all the garlic you like. I like to use 2-3 garlic cloves depending on their size, but you can use more or less if you wish.

Basmati rice: I really like Basmati rice for this dish. It’s very fragrant and cooks very fast. You can also use a long grain rice or Jasmin rice if you prefer that. Brown rice is also a great and healthy choice, however, you will have to cook it a little longer.

Broth: My aim is to keep this dish vegan, so I used vegetable broth. You can use any kind of broth you like or happen to have on hand. If you don’t have broth, you can just use water.

Beans: I used a mix of canned pinto beans and black beans. You can of course use any other kind of beans that you like but I highly recommend using some pinto beans.

Seasoning: to keep things simple, and delicious, I have opted for taco seasoning spice mix. This choice was made to keep this dish as simple and as speedy as possible. You can of course use your own mix of spices, however, I will say that the taco seasoning works very well in this dish.

Tomatoes and cilantro: this combo provides both acidity, from the tomatoes, and a fresh citrusy flavor from the cilantro.

Now that we have covered the ingredients, the instructions are quite straightforwad.

Cooked onions in an instant pot

Set your Instant pot to sauté mode and add your olive oil. After 1-2 minutes add your minced onions and garlic and cook for 4-5 minutes. Your onions should look slightly translucent just like the picture above.

Add rinsed basmati rice, beans, crushed tomatoes and chopped cilantro. Cover in broth and add your salt and taco seasoning. Cover your instant pot and set to pressure cook on high for 5 minutes. Once your Instant Pot is done, release the steam using quick release.

As soon as your rice is done cooking, you will want to remove it from the Instant pot and place it in a serving dish. Leaving it on warm tends to continue cooking which will turn your rice very mushy.

Suggestion : serve with some freshly chopped cilantro and a squeeze of lime.

Ingredients

  • 1 Medium onion, minced
  • 3 Cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 cups basmati rice, rinsed
  • 4 cups broth
  • 1/2 tsp salt
  • 1 tbsp taco seasoning
  • 2 cups mixed beans
  • 1/2 cup chopped cilantro
  • 1/3 cup crushed tomatoes

Instructions

  • Set your Instant pot to saute mode and add your olive oil. After 1-2 minutes add your minced onions and garlic and cook for 4-5 minutes. Add rinsed basmati rice, beans, crushed tomatoes and chopped cilantro. Cover in broth and add your salt and taco seasoning.
  • Cover your instant pot and set to pressure cook on high for 5 minutes. Once your Instant Pot is done, release the steam using quick release.
  • Remove the lid once it is safe to do so and drizzle 1 tbsp of olive oil on your rice. Then, using a fork fluff up your rice. Serve with a squeeze of lime and some fresh cilantro. Enjoy
