Today’s recipe is going to be quick, easy and most importantly delicious! We’re going to be making a smoothie, a Keto Blueberry and Almond Butter Smoothie to be more exact.
My wife, Lea, is a big fan of bloobs and a few days ago she decided to make this awesome thing … out of the blue … and it blew my simple mind.
I then decided that it was too good to keep for myself so, here we are.
Keto Smoothies
Whenever I am making a keto smoothie, my main focus is not to go overboard with all the fruit. Let me explain. Fruits, as delicious as they are, are high in carbohydrates, which can blow-up your carb count. Blueberries are no different.
Here is what you get from this smoothie:
7g Net Carbohydrates
4g Protein
19g Fat
You can cut your carbs significantly by using 1/4 cup of blueberries instead of 1/2 cup.
Getting the Flavors Right: Whenever you are making smoothie, focus on only 1 fruit (2 max). Mix and match your fruit with another ingredient that will bring out its flavor without stealing the show. In our case, Blueberries have a very delicate flavor, so almond butter makes perfect sense as it will not overpower it.
Milk Substitutes:
I have tested this smoothie with whole milk, coconut milk and oat milk. So far, the results have been very consistent and my favorite way to make it is coconut milk. I highly recommend coconut milk, as it is the one that left me the most satiated (until lunch at least).
Not to mention that coconut goes very well with blueberries.
Protein Powder Recommendation:
My go-to is Orgain Vanilla Protein Powder. It’s organic, Plant Based, Gluten-free and most importantly sugar-free. That last part is very important. You don’t want to be consuming any hidden sugar as it tends to add up very very quickly.
Plus, processed sugar is a big no bueno no matter what diet you’re on.
If you don’t want a flavored powder, I recommend using Naked Whey. It’s made from Grass-Fed Milk, therefore not vegan and is GMO, Soy and Gluten-free. HOWEVER, if you are planning on using a non-flavored protein powder, I would strongly recommend adding in a few drops of Liquid Stevia and pure vanilla extract.
Blueberry Almond Butter Smoothie
Ingredients
- 2/3 cup coconut milk or any kind of milk you like
- 1/2 cup fresh blueberries
- 1 scoop vanilla protein powder
- 1 tbsp almond butter
- 1/2 tsp cream of tartar
- 2-3 ice cubes
Optional
- 1 tsp MCT oil
- Collagen Peptides (Not a vegan ingredient)
Instructions
- Add all ingredients into your blender (milk first) and blend until fully incorporated. Serve and enjoy 🙂
Will definitely be trying this out! I am trying to get more and more into smoothies. The wife is an expert but I think she would enjoy this a lot. I definitely appreciate the Vanilla protein powder. I have been shopping around a lot and haven’t found one I’m totally happy with. I’ll go check this one out.
