What’s going on foodies? Hope you all are having a great week, I have a treat for you today. You all know how much I love pasta, and you know I always pack at least one pasta lunch for my work/school week. Today I will share with you 5 amazing vegan pasta lunches that will satisfy your inner pastavore.
The first one is a favorite in my household, especially for Léa. I’m sure you can tell just by the way she is holding that bowl. It’s a super easy recipe that is loaded with nutrients. The “cheese” sauce gets that awesome cheesy color and taste from sweet potatoes, paprika and of course nutritional yeast. Check it out!
The next one on the list is a delicious and nutritious twist on a classic, the pesto. For all you out there shaking your head in disappointment and thinking “Pesto is not made with kale!”.
Get over it, Pesto means paste. This is paste, kale paste.
The freshness of basil compliments perfectly the deep flavours that kale delivers, add some sunflower and pumpkin seeds for a boost of protein and you are in for a treat. Of course, you can substitute for any seeds/nuts you like better.
This is another classic, made vegan, just for you my friends. If you are a reader of this blog you probably know that I am not a vegan, however I do enjoy vegan dishes most of the week and this one for me is a keeper. Let’s be honest here, the idea of vegan ricotta is simply genius. For those of us who want to limit (or eliminate) their dairy intake, this here is a problem solver, a delicious one. I am a big fan of cannelloni and can’t thank Samantha enough for this. This as a perfect make ahead type of recipe, that’ll make your week a easier and yummier.
